Crisp Groundnuts



Heat water in a broad pan. When it starts boiling put crushed garlic and groundnuts. Bring to boil once again. Remove from fire and keep closed for 5 to 10 minutes. Drain on a colander to remove water. Fold a thick towel. Spread groundnuts inbetween the foldings. Wipe well and press with palms to remove the red husk. (peel off the red husk completely.) Deep fry in hot oil using a wire frying basket. Drain excess oil and sprinkle salt and chilli powder when it is still hot.

Note:When groundnuts are fried in this manner it gets a shine and tastes good. Also masala groundnuts can be prepared like this. To make masala groundnuts mix bengal gram flour, salt, chilli powder, garam masala with very little water. Coat on groundnuts. Deep fry by crumbling and putting directly in hot oil.
