Small cracker biscuits 24
Ingredients For Filling:
Grated potato 1 cup
Milk 1 cup
Sugar 1/2 cup
Instant coffee 1 tbsp
Chopped cashewnuts 4 tbsp
Cocoa powder 1 tbsp
Butter 1 tbsp
Ingredients For The Coffee Butter
Icing Sugar 1/2 cup
Butter 2 tbsp
Diluted instant coffee 2 tbsp
Heat up the butter in a saucepan. Then add the grated potato and fry till
the raw smell disappears. Now mix in the sugar and the milk and keep stirring.
Make a paste of the instant coffee and cocoa powder with a little water
and add it to the potato mixture. Cook till a spreading consistency is
acquired. Keep the saucepan down to cool. In the meantime prepare the coffee
butter. In a mixing bowl put in the icing sugar and butter. Beat well.
Then add the diluted instant coffee. Divide the filling into 12 equal portions.
Place twelve crackers on a floured boared. Apply a little coffee butter
on each of them. Now spread a portion of the filling in each of them. Flatten
the portion well. Sprinkle a few chopped cashewnuts on top. Then top with
the remaining 12 biscuits. Press carefully but firmly. Serve immediately
decorated with cream, glazed cherry flowers and fresh mint sprigs.
