Wash and soak rice for 15 minutes. Cut onions lengthwise. Dice tomatoes, as small as possible. Peel and dice potatoes into big pieces. Heat oil in a heavy bottomed vessel and fry ginger-garlic paste, and then onions. Fry till light brown. Add tomatoes and cook till soft. Mix potatoes and fry for another few minutes. Add salt, chilli-powder, garam masala and ground paste. Fry for a minute and then add two cups of water and salt. When it starts boiling add rice and mix well. Reduce flame and close with a tight lid. Keep a weight on top. Cook exactly for 20 minutes. Check whether water is absorbed and serve hot with onion raita.
