Chinese Almond Cakes
Sifted all purpose flour 2 1/2 cups
Sugar 3/4 cup
Salt 1/4 tsp
Baking powder 1 tsp
Butter 3 1/4 cup
Almond extract 1 tsp
Blanched whole almonds 36
Egg yolk 1
Sift flour with sugar, salt and baking powder into a large bowl. Using
pastry blender or two knives, mix until mixture resembles coarse bread.
Beat egg with two tbsp of water and the almond. Add it to the flour mixture,
mixing with fork until dough leaves the sides of the bowl. On lightly floured
surface, knead dough until smooth. Wrap in waxed paper and refrigerate
for an hour. Preheat oven to 350 degree F. Form dough into balls, one inch
in diameter. Place three inches apart on ungreased cookie sheet. Flatten
each cookie with the palm to form a circle of quarter inch thickness. Press
almond into the centre of each.
Mix egg yolk with one tablespoon of water and brush it on the cookies.
Bake cookies for 20-25 minutes or until golden brown. Remove when cool.
Makes about three dozens.
