Cashew Burfi



Warm saffron lightly and powder. Soak cashew in milk for an hour and grind fine. In a casserole mix sugar with half a cup water and stir well. Microwave high for four minutes, todissolve the sugar, stirring once in between. Microwave high, ghee ina cup for 1 minute. To the sugar syrup, add the cashew paste and hot ghee. Microwave high for 20minutes stirring thoroughly twice in between. Test for the soft ball stage. If not done, microwave high again for one or 2 minutes, more till they become soft balls. Add spices, mix well. cool and spread on a greased plate and cut into pieces.
