Carrot Bread



Peel and grate the carrots. Combine the yeast with 1/4 cup of warm water in which a pinch of sugar is dissolved. Keep aside till frothy(about 10-15 minutes). Melt the butter and allow to cool. Stir the salt, sugar and cinnamon into the maida, mix in the carrots. Add the beaten egg and butter. Add the yeast liquid and knead well into a soft dough. (If the dough is sticky, sprinkle some maida. If it is dry, sprinkle some water). Keep covered till it rises to double in volume. Knead lightly again and mix in the nuts. Press the dough into a ring mould. Keep covered till it rises again. Bake in a hot oven(200°C) till done(about 20 minutes).
