Apple And Vegetable Soup

Peel, core and chop apples. Peel and chop potatoes and onion. Heat butter in a pressure cooker and lightly fry onions. Add potatoes, cauliflower and mint. Fry for a couple of minutes. Add apples and stock or water. Pressure cook for 15 minutes. Cool the mixture and blend in a mixer. Add salt, pepper and optional cream. If a thinner soup is desired, add some more stock or water. Heat thoroughtly(avoid boiling) and serve garnished with a few mint leaves. If not using the cream add an additional half cup of milk.
