Almond Meringues

Beat the egg white until very stiff, gradually fold in 50 gms sugar. Add the nut brittle and vanilla, fold in remaining sugar. Arrange spoonfuls on baking tray covered with waxed paper. Sprinkle the shredded almonds on to it and sift sugar over them. Bake for 25 minutes in a moderately slow oven.
